Going Vegan – Salads.

Anyone else hate thinking of lunch ideas everyday?

I do!

I typically make leftovers of whatever I cook and eat on them throughout the week or freeze for a complete meal later on. I have so many recipes to share, but first I’ll start with some of my most favorite “salad” type dishes.

Salads first… 

Fall Brussel Sprouts Salad – delicious and SUPER quick and easy! I took out the cheese to make it vegan.

Leigh’s Salad – My friend, Leigh, made this salad and I just LOVE it! I’m the worst at thinking of delicious salad concoctions so I named this one after her 🙂Screen Shot 2017-12-28 at 3.39.04 PM.png

Salad Dressing recipe from my Mother in law’s friend and fellow cancer survivor – Mrs. Janice. This is so easy and I only make enough for my salad rather than storing it. *Check back soon! I need to find the recipe!

Easy Quinoa Salad – my friend, Kallie, made this for me when I had surgery and it was simple but so tasty!!

“Not as Easy” Quinoa Salad – from Mrs. Janice – its so tasty and I usually make it at the beginning of the week and eat it for lunch. It will keep for about 5ish days depending on how fresh your ingredients are. Also, I hate olives and kinda dislike peppers so I sub out and add different ingredients too. Store bought salads: here and here (minus the bacon) are two recent ones I have tried, but they are all delicious. I typically will make these a base for Leigh’s salad above and add spinach to it. While I always prefer organic ingredients, sometimes easy trumps organic. I typically always make my own dressing because most dressing have soybean oil and thats a no-no for my diet!
